Mini Cheesecakes!

Ingredients:

Crust:

6 tablespoons melted butter

6 tablespoon sugar

1 1/2 cups crushed Graham crackers

Cake:

2 (8ounce) cream cheese room temperature

1 cup sugar

2 eggs room temperature

1 teaspoon vanilla extract

  1. Preheat oven to 350 degrees.
  2. Mix the butter, graham cracker crumbs, and sugar in a bowl. Line the cupcake tin with liners and spray with cooking spray. Fill each with a heaping tablespoon and push down to compact it in. Bake for maybe 3 minutes. Let cool.
  3. Mix your cream cheese and sugar until smooth, about 5 minutes. Add eggs one at a time then add the vanilla extract. Mix until smooth and not clumpy. Pour into tins about 3/4 full. Bake for 20-25 minutes. Until not wiggly, and light in color.
