Ingredients:
2 chicken breasts
1 cup seasoned bread crumbs
1/2 cup flour
2 eggs (scrambled)
1 cup shredded mozzarella
Sauce:
Optional: 1 jar of prepared marinara
or
2 cans of diced tomatoes
2 cloves minced garlic
1/2 diced onion
2 tablespoon olive oil
1/2 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
3 fresh basil leaves or 1/2 teaspoon dry
1/2 teaspoon sugar
3 tablespoon butter Divided
2 tablespoon olive oil
- In a medium pan melt 1 tablespoon of the butter and sauté the onion until translucent. Then add in the garlic, cook for another 30 seconds.
- Add in the tomatoes, oregano, basil,sugar,salt and pepper. Let simmer about 30 minutes. If you’d like you can crush the tomatoes up or completely puree it. Totally up to you, with chicken parmesan I do like some pieces of the tomatoes in there.
- While the sauce is cooking, slice the chicken length wise in half and then cut that piece in half. I like some smaller filets but you can keep them bigger if you like.
- Get a piece of plastic wrap and lay over the chicken and pound it out a little bit just to help tenderize and even out the chicken.
- Salt and pepper your chicken, Set up a dipping station for the bread crumbs, flour and the eggs. Dip the chicken in the flour, eggs, then the bread crumbs. In a medium sauté pan on medium heat melt the butter and the oil and cook the chicken until lightly golden brown about 3 minutes per side. Cook them in batches. If you need more oil or butter add some more in, don’t worry about cooking it through it will finish in the oven.
- Pre heat the oven to 350 degrees. In a baking dish add about half a cup of the sauce on the bottom of the pan. Lay your chicken over the sauce and then put more sauce on top of all the chicken. You will have some left over save it for the pasta. Sprinkle your cheese on top then bake for about 25 – 30 minutes until the chicken is cooked through and the cheese is golden and bubbly. Serve over any pasta that you like and Enjoy!
****I really like this brand of bread crumbs (Vigo) they are seasoned well and have Romano cheese in it. The cheese is that added flavor that my family likes.
