Super, easy, delicious pancakes to make any time of the week. Very easy to make, you will have all the ingredients on hand, the only thing you might be missing is the pumpkin. It’s that time of season so usually pumpkin puree and the pumpkin pie spice are starting to go on sale, it’s time to stock up.
Ingredients:
1 1/2 cups flour
3 teaspoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1 1/4 cup milk
1 egg
3 tablespoons melted butter
1 teaspoon vanilla extract
1 cup pumpkin puree
- In a medium bowl sift together the flour, sugar, baking powder, salt, cinnamon and pumpkin pie spice.
- Make a well in the dry ingredients and add the milk, egg, vanilla, and butter. Mix until most clumps are gone then add the pumpkin puree. Mix until incorporated.
- Heat up your pan on medium/low heat, melt some butter and then add 1/4 cup of batter. Wait a couple of minutes until you start to see some bubbles then you can flip the pancake and cook another minute until golden brown. Take off and cook the rest of the pancakes. Enjoy!
