The Best Potato Soup

Potato soup is one of my favorite soups! It’s great to make on those cooler days. I really like to eat soup and sandwiches, but potato soup is just to die for. I can eat it all the time. Its a simple soup that you can add to, like cheese and bacon if you have it on hand.

Ingredients:

3 cups peeled and cubed potatoes

1/2 cup chopped celery

1/2 cup chopped onion

2 tablespoon butter

2 chicken boullion cubes

1 (32 ounce) carton of chicken broth

2 cups water

1 teaspoon dry parsely

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon celery salt

1 cup milk

4 tablespoons flour

  1. Chop up the onion and celery into small pieces ( I don’t like the vegetables too big).
  2. Melt the butter and sauté the onion and celery in a soup pan until soft.
  3. Peel and chop up the potatoes into small cubes. Add into the pan with the onions and celery.
  4. Add the broth, water, parsley, salt, pepper, celery salt and chicken bouillon. Cover but slant the lid so some air can escape. Bring to a simmer and cook the potatoes about 15-20 minutes or until done. Keep an eye on it.
  5. In a separate bowl mix the milk and flour together. Then whisk it into the soup once the potatoes are done and bring it back to a simmer. Stirring occasionally, let it thicken. When its thickened to your liking it is done, about another 15-20 minutes. Enjoy!
