Bacon Egg and Cheese McMuffin!

(Freezer Friendly)

Ingredients:

(1) 6pack English Muffins

1 package of bacon or deli ham

6 slices American Cheese

6 eggs

butter for eggs

  1. Preheat the oven to 400 degrees. Lay parchment paper on a sheet pan and spread out the bacon. Cook about 20 minutes. Keep your eye on it.Let cool.
  2. Slice open the English Muffins and cook them for 5 minutes in 400 degree oven. Just to get a little crisp on them. Let cool.
  3. While the bacon and muffins are cooking. Butter a pan and start to cook the eggs. I make them overhard. So cook the egg on one side break the yolk( add salt and pepper if you’d like) and flip. Cook another 1-2 minutes. Put one slice of cheese on the egg and then move to a plate to cool.
  4. Start to assemble the sandwiches. Put egg on bottom piece of muffin then add 2 pieces of bacon ( I know every pack of bacon is different so count to make sure you have enough and use your best judgment.) Also you can substitute for deli ham. Put the top on.
  5. Make sure they are cooled down. Rip off pieces of foil then wrap them up and put into a gallon size bag and freeze.
  6. Take one out of the freezer, wrap in a paper towel and cook in the microwave for 1-1/2 minute. Breakfast on the go. Enjoy!
