These muffins are so delicious 🤤. They are great for a quick breakfast or a snack. My family loves them. I use bananas alot but you can add other fruit like blueberry banana, or strawberries. These muffins are so easy to adjust. Tasty, melt in your mouth. Even make bread slices out of it. It’s that easy.
Ingredients:
1 stick melted butter
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
2 eggs
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon of salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 cup sour cream
4 really ripe smashed bananas
1/4 cup chopped walnuts (optional)
- Preheat oven to 350 degrees. Spray muffin pans or loaf pan or you can use cupcake liners. In a bowl mix the flour, baking soda, salt, cinnamon and nutmeg. set aside.
- In a large bowl mix the melted butter, brown and white sugar, vanilla extract and the eggs one at a time. Slowly add the flour mixture.
- Add the mashed bananas, and then fold in the sour cream. Add the nuts in if using.
- Put about 3/4 full of batter in muffin cups, and bake roughly 20 minutes. check with a toothpick, if it comes out clean its ready.
