It’s that time of year. Fresh fruit is always a great way to use and put into muffins or bread. So delicious.
Ingredients:
3 cups all purpose flour
4 teaspoon baking powder
1/2 teaspoon salt
1 stick butter room temperature
2 eggs
1 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 cup milk
2 1/2 cups fresh blueberries or frozen
- Preheat oven to 350 degrees.
- Mix the flour, salt, and baking powder in a small/medium bowl.
- In a large bowl mix butter and both sugars until smooth. Add in the vanilla extract and then the eggs one at a time.
- Alternating the flour and milk, mix into the eggs and sugar mixture. Mix until you get all the clumps out, but don’t over mix. Fold in the blueberries.
- Line your cupcake pan with liners and spray with cooking spray. Fill each one about 3/4 full and bake 25- 30 minutes. Check with a toothpick if it comes out clean they are done. Enjoy!
