Great Blueberry Muffins!

It’s that time of year. Fresh fruit is always a great way to use and put into muffins or bread. So delicious.

Ingredients:

3 cups all purpose flour

4 teaspoon baking powder

1/2 teaspoon salt

1 stick butter room temperature

2 eggs

1 cup white sugar

1/2 cup brown sugar

1 teaspoon vanilla extract

1 cup milk

2 1/2 cups fresh blueberries or frozen

  1. Preheat oven to 350 degrees.
  2. Mix the flour, salt, and baking powder in a small/medium bowl.
  3. In a large bowl mix butter and both sugars until smooth. Add in the vanilla extract and then the eggs one at a time.
  4. Alternating the flour and milk, mix into the eggs and sugar mixture. Mix until you get all the clumps out, but don’t over mix. Fold in the blueberries.
  5. Line your cupcake pan with liners and spray with cooking spray. Fill each one about 3/4 full and bake 25- 30 minutes. Check with a toothpick if it comes out clean they are done. Enjoy!
