Ingredients:
2 chicken breasts
2 eggs
1/4 cup milk
1 teaspoon hot sauce
Breading:
2 cups of flour
1 teaspoon baking powder
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon seasoning salt
1 1/2 teaspoon salt
Oil for cooking
- Slice the chicken breasts in half lengthwise.
- Cover with a piece of plastic wrap and pound out the chicken so it looks thinner, but not too thin about 1/4 -1/2 inch thick.
- Get your breading mixture ready in a medium bowl
- Mix the eggs, milk and hot sauce in another bowl.
- Heat up the oil to 315 degrees. If using a deep fryer go by their instructions. If using a pan , get one deep enough for the oil and fill about an inch full but leave some room at the top.
- Put the chicken in one at a time in the flour mixture, then the egg mixture then flour again.Then dip in the egg mixture and then flour one more time, set aside and finish the rest. Save the flour.
- When the oil is hot enough dip the chicken in the flour one more time shaking off any extra flour, then lay it in the oil. Don’t over crowd, I usually cook 2 pieces at a time. Cook about 8-10 minutes flipping half way in between.
- Set your oven to warm and line a pan with a wire rack and put done chicken pieces on the rack while the rest are cooking.
Serves great with mashed potatoes and white gravy
