Ingredients:
1 tablespoon olive oil
1 pound ground Italian Sausage (mild)
1 small diced onion
3 minced garlic cloves
1 can diced tomatoes with basil & olive oil
1/4 – 1/2 teaspoon crushed red pepper
1 1/2 cups spinach packed
3/4 cup shredded fresh parmesan
1 1/2 cups cream
1 box mostaccoli
reserve 1 cup pasta water
- In a medium pan add water and bring to a boil. Cook pasta till al dente. Reserve 1 cup of water, and drain.
- While pasta is cooking, in a large saute pan or if you have a (Large cast iron skillet) add oil and cook the Italian sausage. Breaking it up into small pieces. While sausage is cooking add in onion and cook until translucent.
- When sausage and onion are cooked add garlic and saute another 30 seconds. Add in diced tomatoes, and red pepper. Stir in cream and 1/2 a cup of reserved water. Bring to a simmer, slowly add in 1/2 cup of parmesan cheese. Mixing it in.
- Once everything is heated through and cheese is melted, stir in spinach and mix until wilted.Then add in the pasta and mix. Spread the rest of the cheese on top. **If it seems too thick you can add in the rest of the water. Enjoy!
** I love using my cast iron skillet for meals like this. It cooks the
sausage so nicely. It gives the sausage a nice browning.
