This pasta dish is delicious. Comes together quickly about 35 minutes. Taste so good with the fresh parmesan and lemon juice. You can always use gluten free pasta if you need to. It’s creamy and so fresh tasting. My family loved it!!
Ingredients:
1 box of Mostaccoli noodles
2 Chicken Breasts
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 Tablespoon olive oil
1 Tablespoon butter
1 diced small onion
3 garlic cloves minced
1 1/2 cups chicken broth
1 cup heavy cream
1 cup fresh shredded parmesan ( split into 3/4 cup and reserve 1/4 cup)
1 juice of lemon
Zest of lemon
parsley for garnish
- In medium saucepan bring water to a boil for the pasta. Salt your water and cook noodles to al dente. Drain and keep until needed.
- While noodles are cooking, slice your chicken into strips. In Dutch oven or large pan put 1 tablespoon of oil in pan and start to cook the chicken. Add your salt, pepper, onion powder and garlic powder mix and cook until chicken is cooked through 5-8 minutes. Set aside.
- In the same pan add butter and cook onion until translucent 5-6 minutes. Add the garlic and cook another 30 seconds until you start to smell it.
- Now add your chicken broth in and scrap the bottom. Add in the cream and bring to a simmer. Add in the 3/4 cup of parmesan in sections and stir until melted. Add the chicken back in.
- Now add the zest of the lemon and the juice. Stir, now add the pasta in and mix the sauce onto the noodles and sprinkle the rest of the parmesan on top and garnish with parsley. Enjoy!
