Crispy Chicken Tenders

One of the families favorite dinners. You can’t go wrong with chicken strips. I like to season my flour really good and the special ingredient is baking powder to get that crispy texter. Its taken me along time to get this one right for my liking and the kids. Sometimes I am the picky one lol. But usually its the kids.

Ingredients:

2 Boneless chicken breasts

1 cup of buttermilk

2 teaspoons of hot sauce (I like to use Franks)

2 cups of flour

1 teaspoon baking powder

1 1/2 teaspoon salt

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon seasoning salt

1 teaspoon chili powder

dash of smoked paprika and chipotle chili powder

oil for frying

  1. Cut your chicken breast into strips. I slice them a little thinner, they turn out better that way. you don’t want huge strips.
  2. Mix the buttermilk and the hot sauce in a medium size bowl and then add the chicken, let marinade 1-4 hours.
  3. You can set up the flour mixture while the chicken is marinating. Mix together all the other dry ingredients.
  4. When the chicken is ready shake off as much buttermilk and then dip into the flour mixture. Set aside and do all the rest. Keep the flour.
  5. Put the oil in a deep enough pan or Dutch oven about 1-2 inches deep with oil and let it heat up to 350 degrees.
  6. Once the oil is hot enough dip the chicken in the flour mixture one more time and shake off as much as you can before putting into the oil. Do not over crowd the pan. Let it cook for about 8 minutes. Till lightly golden brown and crispy.
  7. Set your oven to warm and line a sheet pan with a wire rack and put the chicken on there, it will keep them warm and crispy until the rest are done. Don’t put the chicken on a paper towel it will hold in the moister and they wont be as crispy.
