These are a nice way to switch up the sides for dinner. These take a little more work, but totally worth it. The creamy mashed potato that gets mixed with cheese and sour cream, and you can add a little extra cheese and bacon on top Yummmmy.
Ingredients:
4 russet potatoes ( washed ) Good bigger ones
1/2 teaspoon of salt
1/2 teaspoon pepper
1/2 cup sour cream
1 cup shredded cheddar cheese Divided
2 Tablespoon butter
1/4 cup milk
4 slices cooked and crumbled bacon optional
- Preheat oven 400 degrees. Clean and scrub the potatoes, poke it 3 times with a knife. Then cover in foil. Put in the oven 45 minutes.
- Once potatoes are cooked let cool down so you can handle them.
- In a medium size bowl mix the sour cream, 3/4 cup of the cheese, milk, butter and salt n pepper.
- Once you can handle the potatoes, slice it halfway length wise. Carefully empty out the potatoes leaving a small layer around the potato so the skin is not showing, add it to the cheese mixture. Mash with a potato masher and then Mix with a hand mixer or really good by hand to get it as smooth as possible. Salt and pepper the potato skins before adding the cheese mixture.
5. Start to fill the potatoes back up with the mixture. Add remaining cheese and bacon on top, cook them until hot and the cheese is melted about 20 minutes at 375 degrees. Enjoy!
