Freezer Friendly Breakfast Burritos!

Nothing better than a quick go to breakfast. So simple and easy to take along with you. Before I had my baby I made 2 bags of these so I would have something to eat when I didn’t have time. My daughter also loves them so its a quick breakfast before school. Well guess WHAT! I think I ate only one of them and my daughter ate the the rest haha! I made them for her too, she just loves them so much. I usually just add sausage, but you can do bacon or ham too!

Ingredients:

1(16 oz) tube of Jimmy Deans sausage

10 eggs (scrambled)

1 1/2 cups of cheese ( cheddar, cheddar jack etc.)

salt and pepper

butter

2 packages of flour tortillas ( 8 in, or whatever size you like)

  1. In a medium pan start to cook the sausage until cooked through, crumbling it up into smaller pieces. When done set aside in a bowl to cool.
  2. In the same pan add some butter and the scrambled eggs and cook the eggs until done, adding some salt and pepper. Set aside in the same bowl as sausage to cool down. Add the cheese and then mix together.
  3. Make sure it is cooled down unless you are eating them right away because the moister will make them soggy when going to freeze them.
  4. To Freeze: if using smaller shells the 8 in, put about 1/4-1/2 filling then start at the one end and roll it up as you tuck in the sides. put on a plate and finish the rest.
  5. Wrap individually in foil and then place them all in a gallon size bag. They will stay good in the freezer for about 2-3 months.
  6. When ready to eat take them out of foil and wrap in a paper towel and microwave for about a minute or to your liking. Put some hot sauce on a plate and there is a quick breakfast on the go or at home.
