How I love the freshness of adding lemon to any dish. Its so refreshing when you have a slightly breaded chicken breasts with a garlic lemony sauce. It goes well with mashed potatoes or even over pasta. I have a small lemon tree that I’m trying to grow, but its taken about three years so far. I hope this year is the year I get some lemons.
Ingredients:
2 Bigger Boneless chicken breasts or 4 smaller breasts
1/2 cup of flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves minced
4 tablespoon butter (divided)
2 tablespoon olive oil (divided)
1 cup chicken broth
1/2 teaspoon lemon zest
1/4 cup fresh squeezed lemon juice
Salt and Pepper to taste for the sauce
- Take the chicken breasts and slice them length wise so you have four pieces.
- Take the chicken one by one and put them in between plastic wrap and pound them out so they will be tenderized. You want a thinner piece of chicken.
- In a medium bowl add flour and the salt and pepper and mix. Salt and pepper each chicken breast then coat each chicken breasts in the flour mixture.
- In a medium sauté pan put 1 tablespoon oil and 1 tablespoon of butter on medium heat and then sauté the chicken until golden brown, 2 pieces at a time. Then repeat with the other 1 tablespoon oil and 1 tablespoon of butter and cook chicken through about 3-5 minutes on each side. Set the chicken aside when done.
- Add in garlic and cook about 30 seconds until fragrant. Add chicken broth and lemon juice scrapping the bottom for all that goodness. Cook down until about half way. Add in remaining 2 tablespoons of butter and the lemon zest. Give it a taste and add salt and pepper if you think it needs it. Then put chicken back in and let it heat back up and enjoy!
