Mexican Style Potatoes!

I love potatoes! Seriously any kind. This is a great side dish with tacos, quesadillas, or fajitas. Flavorful Mexican seasonings and then roasted. Its Delicious!!

Ingredients:

6 medium russet potatoes

4 Tablespoons oil ( olive, vegetable, etc.)

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon oregano

1 teaspoon paprika

1/2 teaspoon salt

1/2 -1 green pepper diced

1/2 onion ( small slices)

  1. Preheat the oven to 400 degrees.
  2. Clean your potatoes. Then dry off. Chop into cubes and put into a medium size bowl. Add the onions and peppers.
  3. Mix the oil onto the potatoes. Then add the rest of the seasonings and mix well. Spread out onto a sheet pan. Cook for 20 minutes and flip the potatoes. Cook another 25-30 minutes. Enjoy!

****at 45 minutes I check one of the biggest potatoes and make sure it’s done. Every oven is a little different.
