I love to eat and cook Mexican food. Sometimes you need to switch it up once in a while. We eat a lot of tacos in my house and one day my husband comes home with a small portion of a pork belly and goes ” Here, I got this pork belly I’m sure you can find something to make with this”. I’m like ok. The thing is the only thing that comes to mind is bacon, but I didn’t want to make bacon lol. So I decided were going to try some tacos out of this. I think it turned out wonderful I hope you like it too.
Ingredients:
1 pork belly about 3 pounds
2 teaspoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
2 tablespoon oil ( vegetable, olive)
2 Tablespoons minced garlic
1/2 cup pineapple juice
1/2 cup orange juice
- Preheat oven to 225 degrees .We are going to braise the pork belly. So on the top that has the most fat called the fat cap. Trim just some of it. It might be hard to do but you want to keep some of the fat on it. Slice lines across the top to make diagonal cuts over and across.
- Mix your dry ingredient together. Then add the oil to the belly and rub it on top and underneath. Then add the dry ingredients to it and rub on top and the bottom of the belly.
- Put it in a baking dish big enough for it. Fat cap side up, then add the garlic on top of it. Add the juices and cover with foil. Cook five hours in the oven.
- Once done, take it out and let rest 10 minutes. Cut it up into small cubes. strain the liquid and keep it. Put the cubes back in the pan and add in some of the strained juices. Add a little sprinkle of chili powder and salt in it and put it in the oven at 400 degrees for another 15-20 minutes to get the tips nice and crispy. You are all done load up the tacos with any kind of toppings you like.
