Potato soup is one of my favorite soups! It’s great to make on those cooler days. I really like to eat soup and sandwiches, but potato soup is just to die for. I can eat it all the time. Its a simple soup that you can add to, like cheese and bacon if you have it on hand.
Ingredients:
3 cups peeled and cubed potatoes
1/2 cup chopped celery
1/2 cup chopped onion
2 tablespoon butter
2 chicken boullion cubes
1 (32 ounce) carton of chicken broth
2 cups water
1 teaspoon dry parsely
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery salt
1 cup milk
4 tablespoons flour
- Chop up the onion and celery into small pieces ( I don’t like the vegetables too big).
- Melt the butter and sauté the onion and celery in a soup pan until soft.
- Peel and chop up the potatoes into small cubes. Add into the pan with the onions and celery.
- Add the broth, water, parsley, salt, pepper, celery salt and chicken bouillon. Cover but slant the lid so some air can escape. Bring to a simmer and cook the potatoes about 15-20 minutes or until done. Keep an eye on it.
- In a separate bowl mix the milk and flour together. Then whisk it into the soup once the potatoes are done and bring it back to a simmer. Stirring occasionally, let it thicken. When its thickened to your liking it is done, about another 15-20 minutes. Enjoy!
