Ingredients:
1 stick of soften butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 teaspoon lemon zest
2 tablespoon fresh lemon juice
1 1/2 cups flour
1 1/2 teaspoon baking powder
1/2 teasppon salt
1/2 cup sour cream
2 cups raspberries (fresh , but you can use frozen(do not thaw)
Glaze:
1 tablespoon milk
1/2 cup powder sugar
1/2 teaspoon vanilla
- Preheat the oven to 350 degrees. Grease a bread pan.
- In a large bowl cream your butter and sugar, add in the eggs one at a time and then add in the vanilla extract.
- Zest the lemon first, then add in the lemon juice and mix.
- In a separate small bowl mix the flour, baking powder and salt together. Mix in the flour mixture into the butter mixture slowly. Make sure not to over mix. Fold in the sour cream and then the raspberries.
- Pour into your greased bread pan and cook about 45 minutes to 1 hour. When a toothpick comes out clean its done.
- When the bread is done, set it aside to cool. When cooled, mix the glaze ingredients together in a small bowl and pour over the bread and let it set. Enjoy!
