This is so delicious, and so easy to make. Its very versatile, I’m using sausage and cheese, but you can add any veggies or meats. I actually am adding some mushrooms to half of them, but only because I had to use up some mushrooms ( nothing goes to waste, it’s how I was raised 😄). I’ll be the only one to eat them lol.
Ingredients:
1 (16 ounce) tube of Jimmy Deans sausage
10 eggs
About 1 cup of shredded cheese (cheddar)
1/2 teaspoon pepper
1/2 teaspoon salt
- In a medium size pan start to cook the sausage crumbling as you go. In a separate bowl scramble all the eggs together.
- Start your oven 350 degrees. Grease your muffin pan with some butter or spray. Make sure it’s coated good and evenly so the muffins will come out.
- Add the salt and pepper to the eggs and mix. Get your cheese ready. You can use any kind I like cheddar.
- In each cup add about 2 tablespoons of sausage and then 1 tablespoon of cheese. I eyeball the cheese 😉. Pour the eggs in almost to the top, leave a little room.
- Then cook about 20 minutes. Check with a toothpick, if it comes out clean they are done. Let cool a minute then use a butter knife and go around the edges of the muffin, it will come out easier that way. Enjoy!
*** you will have some sausage left over you can add the rest in all the cups, but it will be alot. Or you can get about 4 more muffins. You just need 3-4 more eggs and cheese.
**I added some mushrooms to 6 of my muffins. While I cooked the sausage I sauted 6 chopped mushrooms in olive oil with a little salt and pepper. Then put them on top of the sausage, then cheese then eggs.
