Ingredients:
3 1/2 pound pork butt
1/2 cup pineapple or apple juice
Pork Rub:
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon garlic power
1 tablespoon brown sugar
1 teaspoon salt
- Mix your rub ingredients together and put into a sealed airtight container. ( you probably won’t use all of it and it can go on chicken or beef if you’d like)
- Start oven and preheat to 225 degrees. Get a pan big enough for your pork butt. Rub the seasoning generously all over the pork butt. Put the pork, fat side up in your pan, make long slices along the top of the fat. Add the juice and about 1/2 cup of water. Cover tightly with foil and cook for about 6-7 hours. DO NOT PEAK!! If roast is smaller it can go about 5 hours, if its bigger let it go another 1-2 hours.
- When it’s done shred the pork and reserve a cup of the juices. Add the reserved juice in the pan with the pork and you can put it back in the oven for 20 minutes to get a little crispness on top if you’d like. Serve by itself or make sandwiches out of it. Add your favorite BBQ too.
Tip** You can put the rub on the pork the day before and wrap it tightly in plastic wrap and put in the fridge overnight. It adds so much more flavor. If you don’t have time it will still turn out awesome 😎.
*** You can use a crock pot, set it to low for 7 hours. High 4-5 hours. I prefer the oven but the convenience of a crock pot does wonders.
Tools to make cooking a little easier
Pyrex Deep baking dish -I love that this one is a little deeper than your usual 9×13 dish. It works perfect for this pork recipe.
Crock pot – This crock pot works so well. I use mine all the time. It’s wide which I love, cooks evenly and the timer is very convenient especially if you go to work or have to run out for the day. It’s awesome that it will switch to warm also once the timer is done. Highly recommend this crock pot.
