The Best Breakfast Casserole!

Ingredients:

9 eggs

2 1/2 cups milk

1 package of bacon

1 16oz tube of Jimmy Deans sausage

1/2 bag of frozen diced potatoes

1 tablespoon butter

salt and pepper

1 cup of shredded cheddar cheese

1 cup of shredded cheddar jack cheese

1. Cook the sausage in a medium size pan until cooked through while crumbling it up.

2. Cook the bacon in another pan or on a parchment lined sheet pan in the oven at 400 degrees for about 20-25 minutes. Chop up when done. If using the oven, when the bacon is done turn it down to 350 degrees.

3. Grease a 9 x 13 baking dish with the 1 tablespoon of butter and put the potatoes on the bottom salt and pepper them.

4. Put the bacon over the potatoes, then add the cooked sausage.

5. Scramble the eggs in a separate bowl add the milk and then add some salt and pepper ( about 1/2 teaspoon of both) Put half of both cheeses over the meat. Then pour in the eggs and add the rest of the cheese. Cook in the oven for about 1 hour. After an hour check it with a knife. Poke the knife through the center to make sure it comes out clean and the eggs are cooked.

***This casserole can be made the night before. Wrap it and put it in the fridge. About a half hour before cooking take out of the fridge to get the chill off, or it will take longer to cook if you don’t, enjoy 😉
