The Greatest Chicken Stir fry!

This dish is as easy and delicious as you can get. It will come together so quickly. Once you have all your ingredients prepped. Which will take only about 10 minutes. The rest of the dish comes together so nicely and quickly. Perfect for a busy night. You can do the prep in the morning or even the night before and have it take only 20 minutes the next day. You cannot beat that. Oh, and it is so tasty the whole family will love it. You get your protein and vegetables all in one dish and no one is complaining. You can add different vegetables and make it so everyone in the family can enjoy it.

Ingredients:

2 Chicken Breasts

2 tablespoons vegetable oil

1 Sliced Red Pepper

1 Sliced Green Pepper

1 sliced Carrot

1 cup Broccoli (fresh or frozen)

2 minced garlic cloves

1 teaspoon minced ginger

Salt and Pepper

Sauce:

2 Tablespoon corn starch

4 Tablespoon water

1/2 cup honey

1/2 cup soy sauce

1/2 cup chicken broth

1 1/2 tablespoon Sesame oil

1/4-1/2 teaspoon crushed red pepper flakes

Steps:

  1. In a medium size bowl mix the water and cornstarch together, then add in all the other sauce ingredients (honey, soy sauce, chicken broth, sesame oil, and red pepper). Set aside.
  2. Slice your chicken into 1 in long pieces or to your liking. Have all your veggies sliced and cut up into 1 inch pieces also. Have everything ready and to go and set aside for a minute.
  3. If you like white rice with your stir fry start your rice so it is ready when the stir fry is. This will come together pretty fast.
  4. In a wok or large frying pan add 1 tablespoon of oil let heat up to a medium heat and start to cook the chicken. Salt and pepper the chicken as you cook it. Cook the chicken in batches so don’t over crowd the pan. Set aside when done. Now, add the last tablespoon of oil and add in the vegetables. Don’t add the broccoli, garlic or ginger yet. Cook for about 5 minutes or until it has soften a little bit. Now if you are using broccoli add that in and cook another 2 minutes.
  5. Add in the garlic and ginger cook for another 1-2 minutes. Now add the chicken back in.
  6. Add the sauce mixture and cook until heated through and the sauce starts to thicken, roughly 5 more minutes. Serve over rice or noodles. Enjoy!
